I enjoy eating healthy, and I started eating "clean" two months ago - but I won't lie that sometimes "healthy" is synonymous for "tastes like cardboard." I've eaten my fair share of cardboard crackers and tasteless treats, in the name of eating healthy.
However - the more I've looked, the more I've found some really delicious AND healthy meals. I'm learning that eating clean can also be eating delicious! And I've been able to slightly modify my favorite recipes in order to make them clean, as well. So today I'm sharing with you...
Whole Wheat Raspberry Muffins

I also loving blending all sorts of frozen fruit with ground flaxseed, a handful of spinach, and some almond milk as the perfect breakfast or late night snack!
Southwest Chicken Quesadillas - Our family's FAVORITE meal!
To make it "clean", use whole wheat tortillas, non-fat plain greek yogurt instead of mayo, and "clean" salsa - no additives or preservatives.
Cilantro Lime Veggie Chicken Couscous
Use whole wheat couscous.
Spinach Chicken Enchiladas
Use whole wheat tortillas and a "clean" green salsa.
Summer Squash and White Bean Saute
Much easier and more delish than it sounds.
Yogurt Marinated Chicken with Mushrooms Sweet Potatoes
Healthy Baked Chicken Nuggets
Use whole wheat breadcrumbs.
Turkey Stuffed Bell Peppers
Use brown rice and "clean" tomato sauce.
Veggie Packed Pesto
Love this over whole wheat pasta and veggies like zucchini and red bell pepper.
California Pasta Salad
Use whole wheat pasta and "clean" italian dressing.
I don't use a recipe for either of the following meals, but I love them so much that I had to share:
Grilled chicken with THIS marinade, over brown rice and a side of grilled veggies.
Easy tacos with THIS homemade seasoning, lean ground beef, beans, spinach, plain greek yogurt as "sour cream", clean salsa, avocado, and a little sprinkling of cheddar cheese all wrapped up in a whole wheat tortilla. YUM.
