Slow Cooker Black Bean and Corn Salsa Chicken

This easy and delicious recipe is from Six Sisters' Stuff. I make it about once a week and it's a hit with whoever I serve it to. You can serve it as chili, in tacos, or however you like!

Ingredients:

  • 2 cans black beans, drained and rinsed

  • 2 cans corn, drained (you could also use frozen corn)

  • 1 package taco seasoning

  • 4 to 5 chicken breasts

  • 1 cup salsa

  • 3/4 cup water

  • Optional garnish: a dollop of sour cream, 1/2 TBS chopped cilantro, and a few slices of avocado, per serving

Directions:

  1. Put beans, corn, taco seasoning, and water in slow cooker and mix together until seasoning is dissolved.

  2. Place chicken breasts on top and spread salsa over chicken.

  3. Cook on high for 4 hours.

  4. Shred meat with a fork.

  5. Enjoy!
