Ingredients:
- 2 cans black beans, drained and rinsed
- 2 cans corn, drained (you could also use frozen corn)
- 1 package taco seasoning
- 4 to 5 chicken breasts
- 1 cup salsa
- 3/4 cup water
- Optional garnish: a dollop of sour cream, 1/2 TBS chopped cilantro, and a few slices of avocado, per serving
Directions:
- Put beans, corn, taco seasoning, and water in slow cooker and mix together until seasoning is dissolved.
- Place chicken breasts on top and spread salsa over chicken.
- Cook on high for 4 hours.
- Shred meat with a fork.
- Enjoy!
